The 2010 vintage produced excellent fruit for sparkling base wine. A cool summer and cool, dry fall allowed for extra hang time on the vine yet lower sugars and more acid retention than typical. The base wine was composed of a blend of our estate-grown Pinot Noir & Pinot Gris, barrel fermented and aged, sur lie in french oak for 1 year.
The second fermentation occurred at Summerhill Pyramid Winery in the Traditional Method. The wine aged sur lie in bottle at Summerhill 3.5 years prior to dégorgement. A dosage of 7 g/l was added before final corking.
